Wine tasting Ronda

This project was born in 2009 from the hand of Pablo and Juanma, two friends with roots in the Guadiaro Valley and the same passion: the vineyard, wine and nature. Since then, they have been working 4.5 hectares of their own vineyards in the heart of the Serranía de Ronda, where each plot speaks with its own voice thanks to its unique soils and microclimates.

Vineyards such as El Tajo, at the foot of the most iconic gorge of Ronda, or El Juncal, in the foothills of the Sierra de las Nieves, are the soul of wines that bottle landscape, origin and character. They cultivate according to biodynamic and permaculture principles, without chemicals, favoring biodiversity and working the land with a deep respect, as if it were a forest.

The winemaking process is as natural as the environment: manual harvesting, spontaneous fermentation, foot treading, and aging determined by tasting, not by the clock. All without haste or artifice.

Under the gaze of Pablo, today’s winemaker and soul of the project, each bottle is an honest gesture, a way of letting the wine find its way, with identity and without masks.

02 La Finca

Landscape, altitude and character

Our vineyards are spread among the unique landscapes of the Serranía de Ronda, at more than 700 meters above sea level, where the Mediterranean mountain climate, the thermal oscillation and the diversity of soils mark the character of each wine. Here, each plot tells a different story: clay, limestone or loose stone soils, slopes with opposite orientations, breezes coming from the valley or from the nearby forest. This natural richness allows us to work with varieties with personality and to make wines that faithfully reflect the place where they are born.

We cultivate 4.5 hectares in different plots such as El Tajo, overlooking the gorge and the Puente Nuevo, and El Juncal, at the foot of the Sierra de las Nieves. Each farm is a living ecosystem, worked with permaculture and biodynamic techniques, without chemicals, with plant covers and real biodiversity.

More than an estate, it is a landscape in balance where the wine begins to be told from the earth.

03 Pablo, winegrower

Instinct, patience and earth

Pablo is the heart of this project. A winegrower by vocation, he has been cultivating vines with patience, intuition and a deep respect for the land for more than a decade. He does not come from the world of wine, but he has made it his own from the roots, learning with his hands in the soil, his eyes set on the sky and his feet firmly on each plot.

His way of working is direct, honest, without prefabricated formulas. He observes, listens and acts when the vineyard asks for it. He understands that wine is born in the field, and that his role is not to intervene, but to accompany. That is why he does not force processes, does not make up wines, does not follow fashions.

For Pablo, each vintage is an opportunity to express what nature has wanted to tell that year. And each bottle is a way to share that story, without filters and with truth.
